Organic whole wheat flour is made from grains that have not been heavily processed, unlike white flour which has been heavily refined. It's higher in nutritional content, with more fibre, which lowers cholesterol, and a lower glycemic index, which prevents blood sugar spikes. It also contains more folate, riboflavin and vitamins B-1, B-3 and B-5. We import ours directly from Infraready in Canada, which does not use any chemical fertilizers, pesticides or artificial chemicals.
